Le nom du p\u00e2tissier ? Quanah Schott. Sa sp\u00e9cialit\u00e9 ? Les macarons. Mais on peut aussi y trouver des \u00e9clairs et toutes sortes de d\u00e9licieux g\u00e2teaux. Nous sommes all\u00e9es visiter sa p\u00e2tisserie pour l&#8217;interviewer sur son m\u00e9tier. Il nous a offert de go\u00fbter ses macarons. Nous avons pris citron, fruits de la passion-chocolat et framboise-violette (le macaron du mois). Ils sont absolument divins.<\/span><\/p>\n<p><span style=\"color: #000000;\">De plus, Quanah Schott est un ancien \u00e9l\u00e8ve du LFA. Notre lyc\u00e9e m\u00e8ne \u00e0 toutes les carri\u00e8res !<\/span><\/p>\n<p><span style=\"color: #000000;\">Voici ce qu&#8217;il nous a dit :<\/span><\/p>\n<p><span style=\"color: #000000;\">1) Pouvez-vous vous pr\u00e9senter bri\u00e8vement ?<\/span><\/p>\n<p><span style=\"color: #000000;\">Je\u00a0m&#8217;appelle Quanah Schott et mon m\u00e9tier est la p\u00e2tisserie que j&#8217;ai \u00e9tudi\u00e9e \u00e0 Paris.<\/span><\/p>\n<p><span style=\"color: #000000;\">2) Pouvez-vous nous parler de votre parcours professionnel ?<\/span><\/p>\n<p><span style=\"color: #000000;\">J&#8217;ai commenc\u00e9 mon apprentissage\u00a0de p\u00e2tisserie par un CAP de 2 ans \u00e0 Paris, chez Pierre Herm\u00e9, puis il m&#8217;a embauch\u00e9. Je suis pass\u00e9 par tous les postes et j&#8217;ai travaill\u00e9 12 ans pour lui, notamment au Royal Monceau, un grand palace parisien. Puis, j&#8217;ai d\u00e9cid\u00e9 d&#8217;ouvrir ma propre p\u00e2tisserie ici, \u00e0 Sarrebruck.\u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\">3) Pouvez-vous pr\u00e9senter votre \u00e9quipe?<\/span><\/p>\n<p><span style=\"color: #000000;\">C&#8217;est une petite \u00e9quipe. Il y a\u00a0 mon amie, Marie, qui m&#8217;a suivi en Allemagne, ma grand-m\u00e8re, et une amie de ma grande soeur qui travaille ici\u00a0\u00e0 mi-temps.<\/span><\/p>\n<p><span style=\"color: #000000;\">4) Quelles sont vos p\u00e2tisseries pr\u00e9f\u00e9r\u00e9es?<\/span><\/p>\n<p><span style=\"color: #000000;\">C&#8217;\u00e9tait le cheesecake, mais j&#8217;en ai trop mang\u00e9 ! Maintenant, ce sont les \u00e9clairs de toutes sortes et les macarons. Ce qu&#8217;il y a de bien avec les macarons, c&#8217;est qu&#8217;on peut jouer sur la couleur, le go\u00fbt et les textures.<\/span><\/p>\n<p><span style=\"color: #000000;\">5) Est-ce que les affaires de votre p\u00e2tisserie vont bien ?<\/span><\/p>\n<p><span style=\"color: #000000;\">Oui, tr\u00e8s bien,\u00a0et je pense qu&#8217;on pourra bient\u00f4t agrandir.<\/span><\/p>\n<p><span style=\"color: #000000;\">6) Comment envisagez-vous l&#8217;avenir ?<\/span><\/p>\n<p><span style=\"color: #000000;\">J&#8217;aimerais embellir et agrandir ma p\u00e2tisserie, et je souhaite que les affaires continuent \u00e0 bien marcher. Comme les macarons vont s&#8217;\u00e9taler, attention de bien laisser de l&#8217;espace entre chaque petit tas. Laisser cro\u00fbter entre 30 et 45 minutes au moins. D\u00e9poser la plaque de macarons sur 2 autres plaques identiques vides. Enfourner pour 10 minutes \u00e0 150\u00b0C.
